One-half Jar of Sonnyboy’s Spicy Goodness Sauce
Two lbs shell on shrimp (frozen or fresh)
One stick butter (or equivalent of oil of your choice - canola, olive, coconut, etc) French baguette
Preheat oven to 400 degrees F.
Put 2 pounds of shrimp into casserole dish. If fresh, just rinse shrimp and put in. If frozen, run under warm water until they are not stuck together. The casserole dish should be the size where the 2 pounds of shrimp can be overlapping but not two layers (one shrimp piled on top of the other in two layers is not as good).
Pour HALF the jar on top of the shrimp. It doesn’t have to be perfect but try to cover most of the shrimp. Put the rest of the jar back in the fridge. It’ll be good there for six months, but you’ll eat it faster than that.
Quarter the stick of butter and scatter about on top of the sauce/shrimp mixture in the casserole dish.
*If using FRESH shrimp, bake for 12 – 15 minutes. **If using FROZEN shrimp, bake for 17 – 20 minutes.
Remove from over, serve while hot and put on table with baguette and go crazy. Or serve shrimp with buttery sauce in bowls. We eat straight out of the casserole dish on hot pad from the middle of the table with lots of paper towels handy.
Sonnyboy’s Aioli (for Crab Cakes or whatever you use aioli for):
Three parts mayo (fat free, or whatever mayo substitute – NOT Miracle Whip)
One part (or two if you like spicier) Sonnyboy’s Spicy Goodness Sauce
Put mayo, Sonnyboy’s and juice of a quarter lemon into a bowl. Blend by hand very well and serve in ramekin or small bowl.
**If you like capers, add a teaspoon of them to the aioli for a kick. We’ve used a teaspoon of honey too in the mix!
Sonnyboy’s Kick Ass Popcorn: Serves one
Pop bag of popcorn of your choice – salted or unsalted or with butter flavor is fine. No fancy popcorn flavors, please. We use Orville Redenbacker’s mini packs (usually come four individual servings to a box).
Sprinkle two or three tablespoons (or more) of Sonnyboy’s Spicy Goodness Sauce straight from the jar onto the popcorn.
Toss popcorn and sauce together in bowl. Doesn’t have to be perfect. Impossible, in fact.
**Mix in peanuts or cashews for giggles if you want before sprinkling on the sauce.
Eat and Love.
Sonnyboy’s Spicy Marinated Chicken: Serves Two
Take two fresh chicken breasts (or four legs). Skin off if you want. Doesn’t matter.
Put breasts/legs into larger-size Ziploc bag. Not giant, but larger than sandwich size. Add four tablespoons Sonnyboy’s Spicy Goodness Sauce straight from the jar into the Ziploc.
Zip Ziploc. Leave on counter for ten minutes, turning and slapping the Ziploc to get chicken well-soaked. Have fun with that.
Grill chicken until done, while sopping chicken with a little extra Sonnyboy’s while grilling. Serve with Sonnyboy’s Aioli.
Sonnyboy’s Bodacious Burgers: Makes three/four sizeable burgers
One and a Half Pounds ground beef
Lettuce, onion, cheese and whatever else you like on your burger.
Four tablespoons Sonnyboy’s Spicy Goodness Sauce.
Add four tablespoons of Sonnyboy’s straight from the jar and mix into the ground beef. Grill the burger. Slap it on a bun, add your preferred condiments and such.
*Option: Instead of mayo, for mayo-lovers, use Sonnyboy’s Aioli Relish (recipe above)
Sonnyboy’s Motherlovin’ Meatloaf: Serves 4 – 6 hefty appetites
Two pounds total of ground beef, ground veal and ground pork mix (sometimes called “meatloaf blend” at the grocery)
One pound ground beef
One-half pound ground pork
One-half pound ground veal
*Can use just ground beef if you are old school, ground turkey if you don’t do cow or Seitan if you don’t do faces.
Ten tablespoons Sonnyboy’s Spicy Goodness Sauce
One small sweet onion.
1 tablespoon Worchestershire Sauce
French’s Fried Onions (from a can)
2/3 Cups Plain Breadcrumbs (we use Cento Plain Breadcrumbs – comes in a can)
4 tablespoons Ketchup (we highly recommend NO high fructose corn syrup brands) 8 tablespoons Sonnyboy’s Spicy Southern Savory Sauce
Preheat Oven to 375 degrees F.
In a medium bowl combine chopped onion, egg, breadcrumbs and 10 ounces of Sonnyboy’s Sauce.
Stir with fork until well mixed. Add ground beef, pork and veal to the mix.
Blend all ingredients well.
Lightly press mixture into deep casserole dish or meatloaf pan, approximately 8 x 4 x 2.5 inches. Cover with aluminum foil and bake in oven for 45 minutes.
Drain off grease from meat a couple of times during cooking.
Mix ketchup and Sonnyboy’s Sauce in a clean bowl.
Remove aluminum foil and sop on the ketchup/Sauce blend generously all over the top of the meatloaf. Add French’s Fried Onion to top. Do not replace aluminum foil.
Bake another 15 minutes, or until meat thermometer reads 165 degrees from center of meatloaf. Let stand for five minutes. Cut and serve. Deeelicious!
Sonnyboy’s Exceedingly Exceptional Baked Eggs: Serves Four
You’ll need four small casserole dishes, like Grandma had that were white with the blue flowers on the sides. Or any dish that will evenly bake eggs in the oven.
Dozen eggs 8 tablespoons of Sonnyboy’s Spicy Goodness Sauce (or 12 tbsp if you want a touch more spicy goodness)
3 ounces of Fresh or frozen (chopped) spinach (thoroughly thawed) 1 small onion Half cup of six-cheese blend, or your favorite cheese blend. Four generous slices of thick-cut cooked ham or bacon.
Preheat oven to 350 degrees F. Very lightly spray casserole dishes with Pam, or spray oil of your choice. Break three eggs each into individual small casserole dishes. Try to keep yolks intact. Spoon two tablespoons (or three!) each of Sonnyboy’s Spicy Goodness Sauce over each individual serving.
Add to four dishes equal parts spinach, chopped onion, cooked ham or bacon, and top with cheese blend. Bake in oven for 17 - 20 minutes for softer yolks, or 27 - 30 minutes for hard yolks. Remove from oven and top with salt and pepper (coarse-grind is best)
Serve with toast and homemade jam, or biscuits with molasses and butter. Enjoy!
